Sausage and Egg Breakfast Casserole

Sausage and Egg Casserole has always been a favorite in my family. My mom makes it every Christmas morning and I made it this Christmas for brunch. It is the perfect dish for breakfast or brunch, especially when you are entertaining, because it can be made ahead of time.

I am making it even easier by using cooked sausage crumbles in my recipe. Here's what you need to make it!

Ingredients:

6 eggs
6 slices of bread
1 pkg of shredded cheese - Sharp Cheddar
1 pkg of cooked sausage crumbles
Salt and pepper to taste

Preheat oven to 375 degrees. Spray a 9" x 11" baking dish with nonstick spray.

Tear the bread into bite sized pieces and layer them in the bottom of the baking dish. Layer the sausage crumbles on top of the bread.

Whisk the eggs in a mixing bowl and pour over the bread and sausage.

If you are making this in advance, you can cover the dish with foil and refrigerate overnight. Bake, covered for 45 minutes.

  1. I've been on a breakfast casserole kick lately. They are relatively cheap, quick, and easy plus they make great leftovers! I haven't made one with bread though, so will give this one a whirl one of these days!
