Easy Summer Tomato and Cucumber Salad

Summer means BBQ's, picnics, and pool parties. It is hard to know what type of food to bring to these outings, especially if the dish is going to be sitting out for a couple of hours. That is why I came up with this easy Summer Tomato and Cucumber Salad, which is refreshing and can withstand sitting outside since it does not have a mayo based dressing.

Easy Strawberry Smoothie

When Spring rolls around and fresh fruits start to come into season, I love to make smoothies for a snack or breakfast. My teenage son is picky about what he eats and does not like many fruits, but he will eat strawberries and loves them in a smoothie. This allows me to sneak in some extra goodness, like yogurt.
There is no excuse to not get your fruit in with this easy strawberry smoothie!

If I can make something in the slow cooker, rather than on the stove, you bet I am going to do it. Nothing is easier than throwing some ingredients in the slow cooker, then coming back later to a ready made meal!

If you have been following me for a while, you may know that I do not like to eat soup in warm weather, but now that cooler weather is here, it is a staple.  Another staple is my slow cooker...I literally can not live without it!  It is great for working moms because it allows you to set it and forget it until dinner time.

Tips for Hosting a Progressive Dinner - Appetizers

For the last several years, the youth group at our church has participated in a Progressive Dinner. If you have never heard of this concept, it is where different families host portions of the meal: Appetizers, Main Course, and Dessert. This is a fun way for the youth to interact with different families within the church. My family hosted the appetizer portion last year and agreed to host again this year. There have been times we have had unexpected guests drop by or hosted an impromptu get together that was last minute. Since the 4th of July is coming up, I wanted to try a twist on a standard macaroni salad, giving it a kick using Mezzetta peppers ...like fireworks in your mouth!

Memorial weekend is the official start of summer and the season of cookouts.  We love to entertain at our house, especially because we have a swimming pool.  When we entertain, I do not like to spend a lot of time in the kitchen, so I try to find recipes that can be made ahead of time or does not require much prep work.  Chicken kabobs is an easy main dish that you can customize with different flavors and fruits or veggies, according to your taste.
