Sweet and Spicy Chicken Kabobs

Memorial weekend is the official start of summer and the season of cookouts.  We love to entertain at our house, especially because we have a swimming pool.  When we entertain, I do not like to spend a lot of time in the kitchen, so I try to find recipes that can be made ahead of time or does not require much prep work.  Chicken kabobs is an easy main dish that you can customize with different flavors and fruits or veggies, according to your taste.

I am using the new KC Masterpiece® BBQ Sauce Mix & Dry Rub to make a marinade for my chicken kabobs that will mix nicely with the pineapple and pepper flavors.  You can use this mix as a dry rub, in a BBQ sauce, or to make a marinade and it is perfect on any type of meat or vegetable

For this recipe, I am mixing the dry rub with Simply Lemonade®, but you could also mix it with Coca-Cola® or Gold Peak® Tea for a tasty dipping sauce for your chicken.


Ingredients:
Mix the pouch of dry rub with 3/4 cup of lemonade in a bowl.  Dip the chicken pieces in the sauce, until all are covered.  Put the chicken in a large plastic storage bag and place in the refrigerator to marinate for 2-4 hours.


When you are ready to prepare your kabobs, thread a piece chicken, pineapple cube, and pepper slice on a metal skewer, alternating until it is full. Repeat process until all skewers are filled.


Place on grill for about 20 mins at 300 degrees, turning once, and removing when done.


These sweet and spicy chicken kabobs pair nicely with a fresh pasta salad and a tall glass of Simply Lemonade®, which tastes as fresh as homemade with no added preservatives, colors, or artificial flavors.  This is the perfect menu to serve at your next cookout!
