Slow Cooker Recipe - Broccoli and Cheese Soup

If I can make something in the slow cooker, rather than on the stove, you bet I am going to do it. Nothing is easier than throwing some ingredients in the slow cooker, then coming back later to a ready made meal!

Make this easy broccoli and cheese soup in the crockpot!

Since cold weather is upon us, I have been craving hearty comfort foods like Broccoli and Cheese Soup.  This was the fist time I made in my slow cooker and it turned out so good!

Ingredients:

4 cups of cut broccoli (or 1 - 32 oz bag of frozen)
1 medium purple onion, diced
1 12 oz can of evaporated milk
2 cups chicken stock
1 block of Velveeta cheese, cut into chunks
1 tsp black pepper


Make this easy broccoli and cheese soup in the crockpot!

Add all ingredients to the slow cooker and cook on Low for 4-6 hours.  Stir well to mix all ingredients together.  If you like a creamier texture, you can mix it with an immersion blender.


Garnish with a sprinkle of shredded cheddar cheese and a handful of croutons, if desired.
