Slow Cooker Recipe - Broccoli and Cheese Soup

If I can make something in the slow cooker, rather than on the stove, you bet I am going to do it. Nothing is easier than throwing some ingredients in the slow cooker, then coming back later to a ready made meal!

Since cold weather is upon us, I have been craving hearty comfort foods like Broccoli and Cheese Soup.  This was the fist time I made in my slow cooker and it turned out so good!

4 cups of cut broccoli (or 1 - 32 oz bag of frozen)
1 medium purple onion, diced
1 12 oz can of evaporated milk
2 cups chicken stock
1 block of Velveeta cheese, cut into chunks
1 tsp black pepper

Add all ingredients to the slow cooker and cook on Low for 4-6 hours.  Stir well to mix all ingredients together.  If you like a creamier texture, you can mix it with an immersion blender.

Garnish with a sprinkle of shredded cheddar cheese and a handful of croutons, if desired.

  1. Yum! This looks SO yummy! I love the way Velveeta melts in soups! Not to mention, it's healthy, 'cause you know broccoli. LOL

  2. Mmm! This looks so delicious! I really love crock pot recipes this time of year, especially soups! This one looks extra cheesy, I am going to def. try it!

    1. I use my crockpot once or twice a week in the winter and love it! Let me know if you try it!

  3. I've been using my slow cooker at least 3-4 times a week!

  4. I believe that healthy food is the source of healthy body and mind. So for a active physique, this purely natural recipe is perfect to try. Also with proper diet, supplementation is equally necessary which you can get with Xtreme no bodybuilding supplement to maintain your physical fitness.
